Serves 4 to 6

Ingredients:

  • 4 cups thinly sliced red cabbage (shredded)
  • ½ head of lettuce, torn into strips (or bought already prepared)
  • 3 small apples (diced)
  • 2 carrots, peeled and shredded (or bought already prepared)
  • ¾ cup thinly sliced scallions

Ingredients:

  • 2 lbs. red potatoes, diced
  • 6 slices bacon
  • 1 onion, diced

  • 1 tablespoon of Dijon mustard
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons of minced chives

Directions:

  1. Place the potatoes in a pot and cover with water.
