Vitamin-Rich Applesauce Pancakes (Save this recipe!)

Have you ever made homemade applesauce? If you haven’t made it before, you should try it, simply because its so easy and so much healthier without any of the additives from store-bought applesauce. And when you’ve made your own applesauce, let’s make these amazing applesauce pancakes that taste so incredibly good!

You start off by peeling, coring and seeding the apples before cutting them into thin slices. Next up, place the apple slices in a large pot with some lemon juice and water, then bring to a boil before reducing the heat down to low and allowing the apples to simmer for around 20 minutes. When apples have simmered until they are soft and tender, place them in the bowl of your food processor or blender and pulse until you get a thick but consistent applesauce (you should get around 1 cup of applesauce). Now how’s that for easy homemade applesauce?

For the pancakes, let’s begin by sifting rice flour, sugar, salt, baking powder and ground cinnamon in a medium bowl, and mixing the ingredients together. In a larger mixing bowl, whisk applesauce with milk, vanilla extract and egg together until combined. Gently sift dry ingredients into wet ingredients and mix well until you get a homogeneous batter. Heat up a little coconut oil in a non-stick skillet over medium-low heat, and pour half cup of pancake batter in the middle of the skillet to form a circle. Allow batter to cook until bubbles start rising to the surface and the bottom has turned golden brown. Flip pancake over with a spatula and allow pancake to continue cooking until the other side is also golden brown. When all the pancake batter has been used up, serve applesauce pancakes with a generous drizzle of honey and eat up!
