The Best Chocolate Chia Seed Pudding Ever (Love this!)

Do you know how difficult it is to make regular pudding? I’m talking old school, no pre-made mixes, traditional pudding that your grandmother used to knock out around the holidays. You know, the stuff you used to indulge in with a giant dollop of whipped cream or the kind that got piled up in a banana pudding? Yes, the really good stuff that used to give you a sugar high when you were a kid and would drive your mom absolutely nuts.

It’s really hard to make! Plus, it is packed with refined sugar and other unhealthy ingredients. That’s why I am all about the chia seed pudding right now. They are ridiculously easy to whip up! No need to sit over the stovetop cooking down a custard for a rich, insanely unhealthy pudding. You might have to wait a little bit for this pudding to set up but making it could be simpler.

You just stir all the ingredients together and wait.

No seriously, for real, that’s it. You just stir it up, Then refrigerate it a bit and stir it again. One more chill session and boom. You have dessert that everyone will love!

Instead you can satisfy your little craving for chocolate with this super simple chia seed pudding recipe. This healthy pudding won’t make you feel like you are eating anything healthy though. It’s rich with chocolate flavor and just the right touch of sweetness to make you feel like you are totally cheating on that diet of yours.

The best part is the texture of the pudding. Instead of being a one-note texture, the chia seeds provide this very slight crunch and chewy element to each bite, which your taste buds will thank you for.

You can even add a little fresh mint to this recipe to get a minty chocolate flavor if you want to mix things up a bit. Other ways to add new flavors would be a little almond extract, a little orange or lemon zest or even a teaspoon or two of peanut butter.
