You’ll need rice flour, baking powder, ground cinnamon, and salt, along with eggs, almond milk, honey, coconut oil and grated apples. In a large bowl, combine the rice flour with the baking powder, ground cinnamon and salt. In another bowl, whisk together the eggs, almond milk, honey, and coconut oil. Pour the wet ingredients into the dry ingredients and then stir well until batter is just combined. Now add in the grated apple and mix until it is evenly distributed in the batter.
Next up, heat up a little coconut oil in a non-stick skillet over medium-low heat, and pour half cup of batter in the middle to form a circle. Allow the batter to cook until bubbles form on the top and the bottom is golden. Flip the pancake over and allow it to cook some more until the other side is also golden. Then, repeat until all the batter has been used up, and then serve these delicious apple pancakes with fresh apple slices and a drizzle of honey or maple syrup! Enjoy!
