Detoxifying Carrot Ginger Soup

Warm, vibrant and full of texture, this carrot ginger soup is bursting with taste and nutrients. Whether taken as a main course or an appetizer, this is a soup that will satisfy both your taste buds and soul. In my opinion, it’s best served with a touch of cream and chopped chives.

This is the best carrot soup I have ever had! Garnish with chopped chives and cream for a perfectly balanced soup.

Ingredients

  • 2 cups of chopped carrots
  • 1 cup of diced onions
  • ¼ cup of grated fresh ginger
  • 3 large cloves of garlic, diced
  • 8 cups of water
  • Salt and pepper to taste
  • Heavy whipping cream, for garnishing
  • Chopped chives, for garnishing (optional)

Directions

  1. Heat up a little oil over medium in a large pan or pot, and sauté the carrots, onions, ginger and garlic until carrots are cooked through (about 15 minutes)
  2. Pour 4 cups of water into the pan and bring heat down to low, allowing vegetables to simmer in the water until carrots are very soft
  3. Blend vegetables and water in a blender until liquid but still chunky (or blend until it reaches consistency of your liking)
  4. Add salt and pepper to taste
  5. If not serving soup immediately, return soup to pan or pot and allow to simmer until ready to be serve
  6. Serve soup with a touch of cream and chopped chives
