Yummy Greek Yogurt Pancakes

I try to eat a bit of yogurt everyday because of the probiotics that are readily available in it. More than anything, I try to incorporate the super healthy Greek yogurt into my meals as an ingredient every once in a while. Today, we’re making Greek yogurt pancakes that are incredibly easy to make and equally delicious to eat!

Start off by whisking rice flour, walnut flour, baking powder, salt and sugar in a large bowl. In a smaller bowl, whisk together milk, eggs and vanilla extract. Pour the wet ingredients into the bowl with the dry ingredients and then mix well. Add in the yogurt and then stir until combined.

Heat up a little coconut oil in a non-stick skillet over medium-low heat, and then pour half cup of batter in the middle of the skillet to form a small circle. Allow the batter to cook until bubbles start rising to the surface and the bottom is a beautiful golden brown. Flip pancake over with a spatula and then allow it to cook a little more until the other side is also golden brown. When all the pancake batter has been used up, serve these beautiful Greek yogurt pancakes garnished with walnuts and a generous drizzle of honey! Enjoy!

Ingredients

  • 1 cup of rice flour
  • 1 cup of walnut flour
  • 4 teaspoons of baking powder
  • 2 tablespoons of sugar
  • ½ teaspoons of salt
  • 1 ½ cups of milk
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • ½ cup of Greek yogurt
  • Coconut oil, for cooking
  • Honey, for drizzling over pancakes
  • Walnuts, for garnishing

Directions
