I have a confession to make. I am addicted to anything with avocados in it. Of course, that basically means that guacamole is my favorite food. Ever. If you were shipping me off to a deserted island, and I only could have ingredients to make one thing for the rest of my life, it would be guacamole (with an endless side of tortilla chips, please!).

Not just any guacamole, though. It would be this guacamole. You might think that’s a crazy thing to say – I mean, how could one person live off of guacamole for the rest of their lives. The only thing I can say to you is, you really don’t understand the depth of my love of guacamole.

Nowadays I see about five million different guacamole recipes with all these crazy ingredients like charred pineapple, goat cheese and strawberries. While all of these different variations of guacamole are just fine, nothing beats a classic recipe like this one. Isn’t the phrase “don’t mess with a classic?” or something along those lines? There’s a reason for it.

Honestly, all those dressed up crazy recipes are all lacking one thing – highlighting the star ingredient, the avocado. It’s the star of the recipe and it gets pushed down to a mere creamy afterthought with way too many recipes that I see out there. I say, instead of throwing in everything in the pantry to drown out the avocado, let’s prop up that avocado on the pedestal it belongs on.

Ingredients

  • 1 large avocado, peeled and pitted
  • 1 tbsp cilantro, chopped
  • 1/2 jalapeño, seeded and diced
  • 1/4 red onion, diced
  • Juice of 1 lime
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. In a medium bowl, mash avocado with the back of a fork until smooth. Stir in remaining ingredients. Serve immediately.
