Massaged Kale Salad

It may sound strange to massage kale as you prepare a salad, but this simple technique tenderizes even the toughest greens. A tangy lemon tarragon dressing accompanies this simple and flavorful kale salad topped with parmesan cheese and pine nuts. Serve it alongside grilled fish or chicken for a well balanced meal.

For Salad:
  • 8 cups kale- rinsed, stems removed
  • 2 tbsp pine nuts
  • 1 tbsp lemon zest
  • Cooking spray
  • 1/3 c shredded Parmesan cheese (substitute nutritional yeast for vegan/Paleo)
For Dressing:
  • 1/2 c olive oil
  • 1/4 c fresh lemon juice
  • 2 tbsp tarragon, finely chopped
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt


  1. Chop kale and place in a large mixing bowl. Gently massage kale using hands for 3-5 minutes to tenderize.
  2. In a small bowl, combine lemon juice, olive oil, tarragon, sea salt and black pepper. Whisk to combine.
  3. Pour dressing over kale. Toss to coat. Add Parmesan cheese, lemon zest and pine nuts.
