For Salad:

- 1 tbsp lemon zest
- Cooking spray
- 1/3 c shredded Parmesan cheese (substitute nutritional yeast for vegan/Paleo)
For Dressing:
- 1/2 c olive oil
- 1/4 c fresh lemon juice
- 2 tbsp tarragon, finely chopped
- 1/4 tsp black pepper
- 1/4 tsp sea salt
