Peanut Butter Chocolate Chip Energy Balls

When you’re in a hurry and need a quick boost of energy, these peanut butter chocolate chip energy balls will do the trick. Rich, delicious and filled with peanut butter, almond meal, shredded coconut and chocolate chips, these energy balls will keep you going long after you’ve eaten them! Best of all, they’re made in just 15 minutes and I’m guessing you have most if not all of the ingredients in your pantry already!

Ingredients

  • 2 cups of peanut butter
  • 1 cup of blanched almond meal
  • ½ cup of unsweetened shredded coconut
  • ½ teaspoon of salt
  • ½ teaspoon of pure vanilla extract
  • 1 tablespoon of raw honey
  • ½ cup of mini dark chocolate chips

Directions

  1. Combine peanut butter, almond meal, shredded coconut, salt, vanilla extract and raw honey in a large mixing bowl
  2. Using your fingers, bring the dough together until you get a homogeneous mixture (the dough should be easily moldable into balls, but not be extremely sticky)
  3. Add in mini chocolate chips to the mixture, and gently fold in the chocolate chips with your hands until chocolate chips are evenly distributed
  4. Store in an air-tight container in the refrigerator for up to a week
