Easy Vanilla Pancake Recipe

There are so many different types of pancakes that you can possibly make – and while some are more elaborate than others, there are days that I just crave simple, plain vanilla pancakes. So today we’re making the easiest ever vanilla pancakes – that still taste incredibly good!

Easy Vanilla Pancakes

Let’s begin by mixing milk, eggs and vanilla extract in a small bowl. In a large mixing bowl, sift rice flour, baking powder and sugar together and then create a hole in the middle of the dry ingredients. Pour the wet ingredients into the hole you created and whisk the ingredients well to achieve a homogeneous batter.

Melt a little coconut oil in a non-stick skillet over medium-low heat, before pouring half cup of batter in the middle of the skillet to form a circle. Allow the batter to cook until bubbles start rising to the surface and the bottom has turned golden brown, before flipping the pancake over with a spatula. Allow pancake to continue cooking for a bit longer until the other side is also golden. When all the pancake batter has been used up, serve these super easy vanilla pancakes with a drizzle of honey.

Ingredients

  • 1 cup of milk
  • 1 egg
  • 2 teaspoons of vanilla extract
  • 1 ½ cups of rice flour
  • 2 teaspoons of baking powder
  • 3 tablespoons of sugar
  • 2 tablespoons of coconut oil, melted + more for cooking
  • Honey, for drizzling over pancakes

Instructions

  1. In a small bowl, mix milk, eggs and vanilla extract together
  2. In a large mixing bowl, sift rice flour, baking powder and sugar and mix well
  3. Create a hole in the middle of the dry ingredients and pour in the wet ingredients before whisking well to get a homogeneous batter
  4. Melt a little coconut oil in a non-stick skillet over medium-low heat, and pour ½ cup of batter in the middle of the skillet
  5. Allow pancake batter to cook until bubbles start rising to the top and the bottom is golden brown. Flip pancake over with a spatula, then allow pancake to cook a little more until the other side is also golden.
  6. Repeat until all the pancake batter has been used up
  7. Serve vanilla pancakes with a generous drizzle of honey
