Let’s begin by mixing milk, eggs and vanilla extract in a small bowl. In a large mixing bowl, sift rice flour, baking powder and sugar together and then create a hole in the middle of the dry ingredients. Melt a little coconut oil in a non-stick skillet over medium-low heat, before pouring half cup of batter in the middle of the skillet to form a circle. Allow the batter to cook until bubbles start rising to the surface and the bottom has turned golden brown, before flipping the pancake over with a spatula. Allow pancake to continue cooking for a bit longer until the other side is also golden.
